The experience begins with a guided walk through the Bobal vineyards, where you will discover the origin of this native variety and how its deep roots allow Novos wines to reflect the essence of the terroir. During the tour, the owner of the winery will tell you about the sustainable cultivation methods they follow, respecting the natural balance and promoting sustainability in every process. From there you will go to the winery, where the winemaking process will be explained and you will be able to taste some of the musts and wines in production. A tour of one of our vineyards and an explanation of the viticulture of the Jerez region, followed by a visit to the winemaking area. We will continue in the Fino solera where we will talk about biological ageing and the system of criaderas and soleras. From there we will move on to oxidative ageing and finally a tasting of 4 wines accompanied by local tapas will be served.
