In a winery surrounded by vineyards, we taste wines without aging in clay jars, giant cement vessels where everything begins.
1:30 PM – FIRE
The craftsmanship of wine. Meeting with coopers, the artists who tame the staves with fire and fill barrels and casks with soul.
2:30 PM – SEA
Local gastronomic pairings from the garden, the dehesa, and the sea, with dishes full of history dating back over 2,000 years. Upon leaving, we are embraced by the sea of olive trees.
4:00 PM – AIR
Sunset with umami. A walk among olive trees, vineyards, and centennial trees for a "forest bath," with a tasting of oils, wines, and old vinegars outdoors on a beautiful porch.

GIL ARMADA is the name of a family connected to a place and a history. The place is the Pazo de Fefiñáns, and the history dates back to the 16th century when Juan Sarmiento de Valladares, a trusted advisor to Philip II, began the construction of the architectural complex. This remarkable site has been preserved in perfect condition to this day and was declared a Cultural Heritage Site in 2012.
